Vegetarian Coconut Curry

Indulge in a burst of flavor with our Vegetarian Coconut Curry! Packed with vibrant vegetables, chickpeas, and simmered in rich M2N2 coconut milk and oil, this aromatic curry is a delicious fusion of spices and creamy coconut goodness. A delightful, hearty dish that brings warmth to your table in every spoonful! 

Ingredients:

  • 2 tablespoons M2N2 coconut oil
  • 1 onion, finely chopped
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 2 tablespoons Sizzling Spices  curry powder
  • 1 teaspoon Sizzling Spices ground turmeric
  • 1 can (400ml) M2N2 coconut milk
  • 2 cups mixed vegetables (e.g., bell peppers, carrots, broccoli, cauliflower)
  • 1 cup chickpeas (cooked or canned)
  • Salt and pepper to taste
  • Fresh cilantro for garnish (optional)
  • Cooked rice or naan for serving

Instructions:

  • Sauté Aromatics: In a large skillet or pot, heat M2N2 coconut oil over medium heat. Add chopped onions and sauté until translucent. Add minced garlic and grated ginger, and cook for another minute until fragrant.
  • Add Spices: Sprinkle curry powder and turmeric over the onion mixture. Stir well to coat the onions in the spices, allowing them to toast for a minute to release their flavours
  • Simmer with Coconut Milk: Pour in the M2N2 coconut milk and stir to combine with the spices and onions. Bring it to a gentle simmer
