Coconut Bliss Chicken Curry

Here are the ingredients for this delicious curry 

Ingredients: 

  • 1.5 lbs (680g) chicken breast or thighs, cut into bite-sized pieces 
  • 2 tablespoons M2N2 coconut oil 
  • 1 onion, finely chopped 
  • 3 cloves garlic, minced- We recommend Sizzling Spices 
  • 1 tablespoon ginger, minced 
  • 1 red bell pepper, sliced 
  • 1 can (13.5 oz / 400ml) M2N2 coconut milk 
  • 2 tablespoons chili powder or Paprika – We recommend Sizzling Spices 
  • 1 tablespoon curry powder – We recommend Sizzling Spices 
  • 1 tablespoon brown sugar or honey (optional, for sweetness) 
  • Salt and pepper to taste 
  • Fresh cilantro for garnish 
  • Cooked rice or naan bread (optional, for serving) 

Instructions:

  • Heat M2N2 coconut oil in a large skillet or pan over medium heat. Add chopped onions and sauté until they turn translucent. 
  • Add minced garlic and ginger and cook for another minute until fragrant. 
  • Add the chicken pieces to the skillet and cook until they’re lightly browned on all sides. 
  • Stir in the 2 tablespoons of chilli powder and curry powder. Coat the chicken evenly with the spices. 
  • Add the sliced red bell pepper to the pan and sauté for a few minutes until they start to soften. 
  • Pour in the M2N2 coconut milk, stirring well to combine all the ingredients. Bring the mixture to a gentle simmer. 
  • Let the curry simmer for 15-20 minutes or until the chicken is cooked through and the sauce thickens slightly. If using sweetener, add it now and season with salt and pepper according to taste. 
  • Once done, remove from heat. Garnish with fresh cilantro. 
  • Serve the creamy coconut curry chicken over cooked rice or with naan bread.
